Tangelo Cake

 

 

One of my family's favourite cakes is Michelle's Orange Cake, it is light, moist, flavoursome - just simply scrummy. I naturally needed to see what that particular cake would taste like when made with tangelos (my daughter had popped some tangelos in our shopping cart). A cross between a grapefruit & a tangerine I decided to only use the juice & zest of the tangelo.

 Wouldn't you know it my son is grabbing the largest piece. 

 

This recipe was designed specifically to be made with Bakers' Magic gluten free flour. The finished baked product will not be the same if you use another gluten free flour and you will need to adjust the recipe, particularly if the flour you're using contains rice flour. 

 

Ingredients

Cake

200 g Tangelo juice

Zest of the tangelos (or 1.5)

200 g Bakers' Magic Gluten free flour

35 g Potato starch

1/4 tsp Salt

1 tsp Baking powder

225 g Caster sugar

200 g Butter

3 Eggs

 

Tangelo - I used 2 Tangelos to make the cake, there was sufficient juice left over for the icing. 

Maize starch = Cornflour from maize/corn and potato starch is sometimes labelled as potato flour. For more information go to Maize starch vs Cornflour.     

Tangelo Icing

300 g Icing sugar

100 g Butter

Zest of a tangelo 

25 g Tangelo juice

Method

Turn the oven on to 170 C.

Grease a cake ring tin.

Thermomix

Add the butter, eggs & sugar to the TM bowl & mix @ 37O C for 1 min 30 secs at speed 4.

Add in the remaining dry ingredients & mix for 5 secs speed 4. If the ingredients are not all incorporated mix again for 5 secs speed 4. The resulting cake will be flat if the cake batter is mixed too hard/long. 

Food Processor

Mix together the Bakers' Magic Gluten free flour, potato starch, salt & baking powder.

Melt/soften the butter. Add butter, eggs & caster sugar to the food processor. Pour in the tangelo juice.

Add in the remaining dry ingredients & process until the batter is uniform. Don't over mix it. 

Both

Pour cake batter into the ring tin & bake for ~30 - 35 mins. The time will depend on your oven.

Bring out of the oven & wait 5 mins before turning out the cake.

Icing - can be a quick melt & mix or can be made into a butter cream icing. I mixed the ingredients in my Thermomix (speed 4) until it was uniform.  

Allow the cake to cool before putting on the icing (particularly if you have made butter cream icing).
