AC Cupcakes

 

 

This recipe was made to order for my son. I asked my family what fruit they wanted in a fruitcake. My son's reply was apples & cherries - only those two. With a hint of cinnamon & vanilla these AC cupcakes are delicious.

This recipe was designed specifically to be made with Bakers' Magic gluten free flour. The finished baked product will not be the same if you use another gluten free flour and you will need to adjust the recipe, particularly if the flour you're using contains rice flour.   

Ingredients 

Dry 

175 g Bakers' Magic Gluten free flour

35 g Potato starch

1 tsp Baking powder

1 tsp Cinnamon

1 tsp Salt

150 g Caster sugar

Wet 

200 g Glace cherries

200 g Oil (I use Rice bran oil)

2 tsp Vanilla essence

3 eggs

2 Large pink lady apples

 

Maize starch = Cornflour from maize/corn and potato starch is sometimes labelled as potato flour. For more information go to Maize starch vs Cornflour.

 

Method

Preheat oven to 170 C.

Line a muffin tin with 12 patty cake papers.

Mix together the dry ingredients into a bowl.

Roughly chop the cherries & add them to the dry ingredients. If you have whole cherries in the mix they will fall to the bottom - my children wanted this to happen.

Peel both apples - finely grate one & chop the other into little chunks.

In another bowl mix together the oil, vanilla, eggs & apple.

Pour the wet mix over the dry mix & stir to combine.

Spoon the mixture "equally" into the patty cake papers. 

Bake for approximately 25 mins.

Makes 12.
